Day 4

My whole day was off! I was excited when I was reminded no fiber drink on day 4!!!! Yes!!! 

It was a long busy night/ morning at work and I was hungry when I got off at 8:30am. I was also sleepy. When I got home the little Rogers kids aka my fur babies. (My granny calls my dogs that... LOL! It's so damn cute) They were so excited to see me. I wanted to snuggle with them but I needed food and my morning pills for the cleanse.

Egg muffin and strawberries for breakfast with some orange infused water. 

*** I didn't drink a spark because I needed sleep.***

I was able to sneak up to bed and pass out with my hubby. I'm sure he woke up but I was trying to be so quiet. Blue snuggled on my pillow like usual and Izzie was on puppy crack! Ugh! The trick was a belly rub and snuggles from me. Passed OUT! Our bed was full and so was my heart. I wanted to freeze that moment. It's rare with our crazy work schedules. 

I was hungry when I woke up and needs some energy. I had that pre made spark I forgot yesterday waiting on me.

•Lunch- I headed up a turkey burger and sweet potato I ate the burger alone and the sweet potato was so yummy and sweet. Strawberry and lemon infused water. (My favorite)

This is now around 4:00pm and the hubby has to go into work at 5:30. I was starting to get into the sad alone mode. I have 3 days off and he has to work every night which means he'll be sleeping during the day. Total bummer! 

We had horrible storms today and it was so gloomy. That called for catch up on the DVR shows. I might be a tv junkie. Sorry not sorry. But if you're interested in my favorite shows that are on right now I'll list a few below. You can go online to the networks websites and catch up if you haven't start watching them already.

I took a quick trip to the store to return a movie to the "vending machine" rental. Why didn't I come up with that idea? Lord knows I've been to plenty of bending machines! 

I needed a few things

• extra virgin olive oil.
• balsamic vinegar 
• paper towels
• dairy free Parmesan cheese
(Shut the front door)
• strawberries
• green apples 
• dairy free chocolate chips
(For the win!!!!!) 
• avacados
• garlic gloves 

•Dinner- zucchini and yellow squash noodles with garlic, cherry tomatoes and extra virgin olive oil.  Sautéed that up and added a piece of grilled chicken from meal prepping. Used some of the dairy free Parmesan cheese and went to town! Nommed that pasta up! It was probably one of the best meals I've made in a while. Pat on the back! 

I'll stop bragging... ;)

I have plenty of veggies for making zoodles and plan to make baked spaghetti with the yellow squash, zucchini, and eggplant. Ground turkey and I'm going to attempt homemade spaghetti sauce. Fingers crossed. Damn! I forgot to buy tomatoes! :(

I'll post all about that tomorrow on my day off.

Enough rambling from me tonight.

I need to get back into regular sleep mode and don't want to waste my days off sleeping too late. I will sleep in... But not late. :) 

Day 4 was weird like I said but overall a good day and night.

Spaghetti Squash

Simple and easy!!! And I've been pinning this forever and meaning to make it! Pinterest is getting more use now than ever since I've been eating healthy and trying to eat clean! 

Pre heat over at 375 degrees

Cut spaghetti squash in half. Be careful it's kind of hard to cut through.

    Scoop out the insides and throw away
 
I then brushed EVOO all over the inside and then brushed fresh chopped garlic all over it! Remember I love garlic and I used 4 cloves. Sprinkle a little sea salt and pepper too! 
This is where you put it in a baking dish with water in the bottom. The amount to just make the bottom sit in it. 

        Bake for 1 hour at 375 degrees. 

             Ready to come out!!!

They say to let it sit for a little bit to cool off... I got way too excited and wanted to try scraping the "noodles" out with the fork like you see all over Pinterest!!!! It's the little things that make me happy! :)

All you do it pull your fork back and the "noodles" start pulling apart. So neat. Or maybe I just think it's neat! Just keep running your fork through the spaghetti squash until all is scraped out and it's flimsy. 




Getting to start on the second half! This really makes a lot of spaghetti squash! Perfect for meal prep!! 
          Finish up and toss the skin!! 

I was dying to try it do I sprinkled a little cilantro on too with a little bit of lime juice. 
Just to feel fancy and to add a little extra flavor in ground pepper on top and sea salt too! Extra seasoning was perfect!

Spa Day Smoothie!!!

So fresh and so clean clean!!! That describes today's smoothie! I love watermelon! Looooove the stuff I seriously almost lived on it one summer! 

Seedless is the way to go too!                     
Or maybe I'm just lazy! :) 

••Spa Day Smoothie••

**Prepped baggy Includes**

• handful of spinach
• 4 cubes of cantaloupe 
• 6 cubes of watermelon
• 3 cucumber slices (no skin)
• 1 pineapple chunk (I ran out of pineapple so that 1 chunk must have snuck in the bag) lol :)
• teaspoon of chai seeds (pre ground)
• 8 ounces of water

• I set out my baggie first thing when I wake up... It's gives it some time to defrost. I love mine super cold though!

I add everything in the largest magic bullet cup I have and let it work it's magic!!!  I don't like mine chunky at all!!! Gag! So I pretty much blend until is juice!! 

I will say you cannot taste the spinach! I swear! I wouldn't drink it if you could! 

But... You can taste the cucumber!!! This is a very FRESH clean tasting smoothie! Like wish you were in a spa having a beauty day!

The title says it all! I wish I had another one right now! Craving chocolate is something that never happens for me... I'm more of a salty that sweet person. But for some reason I was craving some chocolate. Maybe it's because I had to stock up on the fellas Reese's Cups. They are EVERYWHERE!!!!! Ugh! And I got lucky today I found my Luna Bars on sale. 10 for $10... I love them and just found the s'mores one. I've been on the hunt for the carrot cake. I think Tarjay has them. 

Ready for the Amazeballs Smoothie Recipe?? It's super simple and easy AND.... DELISH! 

Amazeballs Smoothie

• 1 handful of spinach
• 1/2 a frozen banana
•  1/2 cup of Dark Chocolate Silk
• 1 Luna Bar- ( I used chocolate dipped coconut) Any bar will do! 
• 1/2 cup of Greek yogurt (coffee dark chocolate) 

That's it!!! Super simple and very easy and simple ingredients!

Directions- Cut up Luna bar into squares and put in the magic bullet. Blend until all chopped up. Add Silk and Greek yogurt to the cup. You will then add your spinach and banana. Blend until smooth. I ended up adding a little extra Silk to thin it out a little more. This was amazing y'all!! I could have that for breakfast everyday or an after dinner smoothie! Yuuuum! 

Please go make this now! Let me know what you think! I used a wider smoothie straw also! (thanks Jaclyn for giving me the best smoothie straws ever!) You'll get little yummy chunks of the Luna bar!

The fella and I went to the store today and I spent most of my time in produce! I stocked up on items to freeze for the week. Meal prep is the key! I am not a morning person so I need to have something quick and easy. Smoothies! I used to have Chick Fil-A for breakfast a lot of mornings before work... Crazy! So much money too and those damn chicken minis! I'd always order a four count with a large sweet tea. No wonder I felt like crap all the time and I blew up in weight even more! 

I bought kale this time. I've been meaning to buy some but honestly I was afraid of the taste. I can't taste the spinach at all so I'm hoping its the same with kale. Fingers crossed for sure!  And I bought strawberry Greek yogurt for some extra flavor. Greek yogurt can be sour sometimes and too tart. But I love the creamy texture you get from it. 

Today's purchase
2 bundles of kale
1 large bag of spinach
2 strawberry cartons
1 pineapple
2 avocados 

We are talking super green smoothies this week!! I'm looking for a good protein powder to add. If anyone has suggestions let me know.



Big Gulp Smoothie!

I'm stealing the title of today's blog from my good ole neighbor! She explained this mornings smoothie to a T! BIG GULP! I love adding Greek yogurt to my smoothies for that extra creamy smooth texture and flavor. I'm so full!!! Like super full. I packed my lunch today also and I'm not sure I can even eat it until at least 2:00. I'm also excited for the energy I get from this power smoothie! Who needs coffee? Not this girl!!! 

*BiG Gulp Smoothie*

• 2 handfuls of spinach
• 3 strawberries
• 2 spoonfuls of mango
• 3 pineapple chunks
• 1/2 cup of blueberries 
• 6 raspberries 
• 2 spoonfuls of plain Greek yogurt
• 16 oz of water
• tablespoon of chai seeds 

I had to make this one in the larger attachment of the magic bullet. There is a lot of yummy goodness going into this smoothie. I am a nerd and decided to use two large cups from the magic bullet. Then once everything was blended well I used the blender attachment to add the Greek yogurt to smooth it all out! 

Now if you don't like the seeds in your smoothies beware of this one! Every time I add raspberries it's always seedy. I kind of like the extra crunch though. Also with the chai seeds I pre pulses mine in the smaller magic bullet making it more of a powder. AMAZING!!! Duh!

Salmon and Shrimp!

Summer time at The Rogers house means grilling every night! When the fella isn't working night shifts we usually grill something. I'm afraid to use the propane tank... Call me a sissy! 😉 I don't trust myself and my luck I'd set the condo on fire. 🔥 We picked up shrimp and salmon from the store and I'm made glaze them.
 
• handful of cilantro 
•half a lemon squeezed 
• 4 garlic gloves
•pepper
•salt
• olive oil 

Put everything in the magic bullet and blend until desired. I like having some chunks of garlic still to spread on. I brush the glaze/ paste on the salmon and both sides of the shrimp. (I used metal skewers for the shrimp.) 

I also got a little wild and made some blackened!! Yuuuuum! The fella doesn't like the green color or cilantro... So he made his with Huey's seasoning. (Huey's is in Memphis, TN) It has a good kick to it! Both DELSIH! 

Had to add something green. Asparagus!!!! 

Legs are sore from #squatsquad but feeling good! Can I get a little amen for day 4- REST DAY!!!! 




Smoothie Queen!

A lot of people have been asking what I put in my smoothies and can you really not taste the spinach! I swear to you all I cannot taste any spinach at all! 

I started the smoothie kick last week and I'm in love with them! They look nasty and green but they taste amazing! This week I decided to go simple and cheap being on a budget. I bought 2 cartons of strawberries 2 for $5, a pre cut pineapple for $2.99, 2 green apples for $1.89 and a bag of spinach for $2.50. I cut everything up and started the weekly prep for my smoothies. With everything I bought I was able to pack 20 sandwich baggies. Which is awesome since I started drinking one for lunch also. 20 meals for around $13 is pretty dang good! High five for my money saving skills! 



Oh and I love my Magic Bullet!!!
