Spaghetti Squash

Simple and easy!!! And I've been pinning this forever and meaning to make it! Pinterest is getting more use now than ever since I've been eating healthy and trying to eat clean! 

Pre heat over at 375 degrees

Cut spaghetti squash in half. Be careful it's kind of hard to cut through.

    Scoop out the insides and throw away
 
I then brushed EVOO all over the inside and then brushed fresh chopped garlic all over it! Remember I love garlic and I used 4 cloves. Sprinkle a little sea salt and pepper too! 
This is where you put it in a baking dish with water in the bottom. The amount to just make the bottom sit in it. 

        Bake for 1 hour at 375 degrees. 

             Ready to come out!!!

They say to let it sit for a little bit to cool off... I got way too excited and wanted to try scraping the "noodles" out with the fork like you see all over Pinterest!!!! It's the little things that make me happy! :)

All you do it pull your fork back and the "noodles" start pulling apart. So neat. Or maybe I just think it's neat! Just keep running your fork through the spaghetti squash until all is scraped out and it's flimsy. 




Getting to start on the second half! This really makes a lot of spaghetti squash! Perfect for meal prep!! 
          Finish up and toss the skin!! 

I was dying to try it do I sprinkled a little cilantro on too with a little bit of lime juice. 
Just to feel fancy and to add a little extra flavor in ground pepper on top and sea salt too! Extra seasoning was perfect!

Sweet Quesadillas

Sweet tooth is something I rarely have but I have been having a one lately. I really like the tortillas I purchased at Costco last week. They were $5.99 for 80 which is a really good deal! They are low carb and high in fiber... 12 grams of fiber to be exact! Your pooper will thank you! ;) yes I said that! Haha!

I really like PB2 and PB2 chocolate but I'm out of the PB2 Chocolate. Everywhere I look in town is out so I bought my fave Nutella!!! Not good for you compared the other but it will have to work for now. Yum though! :/

I spread a thin layer of PB on the tortilla then a little bit of Nutella. Depending on my mood I put different things on it. Last night I added bananas, strawberries, coconut flakes, chai seeds and flax seeds. Yum!

Today's was perfect for the sweets cravings! It only had PB, Nutella, coconut flakes and flax seeds! I didn't put it in the pan either! It was amazing!!!! 

When craving a sweet treat y'all go for this!!!

Zucchini Casserole



I know y'all have been waiting for this because I've not stop talking about it. Well it's low carb, 160 calories per serving and delish!!! I think it's better heated up. I used it as meal prep and it made 6 servings. I did however eat it for lunch and dinner some days... Haha it's that good! 

I will make a confession... I do NOT like onions... I'm weird. And I know cooking with them gives food sooooooooo much flavor!! WHATEVER!!! I can't stand them! Blah! Lol... Onion hater right here! 

Feel free to keep them in the recipe though if you're a fan. I did however add extra garlic!!! Yuuuuum! 

Not only will y'all get the direct link for food.com for the recipe y'all are going to get an OVERLOAD of pictures from me!!! You know the usual... :) But this time I tried taking step by step for the people like me that like to see visual recipes... Hopefully I'm not the only one that's like that... Lol! 

When I went to the store for the ingredients (Food City) the local farms produce was in the store which was a bonus! $.99 per pound for zucchini!!! The yellow squash was the same price and that's what the online recipe calls for but they didn't look as good as the zucchini. And I really like it over yellow squash anyways. 

Once home I started making the casserole first thing because it takes 40 minutes to bake. And I wanted it for lunch the next day and I wasn't going to eat it after 9:00 anyways. 

This is very simple and yummy! Hope y'all enjoy!!!

• 1lb of zucchini- 3-4 
• 4 garlic gloves- minced 
• 1 egg
• 1/2 cup of mayo- I used light
• 1 cup of shredded cheese ( I useded Colby/ jack)
• salt to taste! I used kosher salt
• little bit of pepper 

• half a chopped onion (I didn't use this)

• pre heat oven at 350 degrees 

• chop zucchini in little slices and place in a large pot with about 4 cups of water or enough to slightly cover your your zucchini. Then put your garlic in the same pot with the zucchini. Let boil and steam the veggies! (This will also be the time when you put the chopped onion in with the zucchini and garlic to steam) 

• in the food processor add the mayo, 1 eggs and 1/2 cup of cheese. And mix until creamy.

•Once you have steamed your zucchini pour out into a colander to drain the water.

• option 1- (which is my favorite)  instead of putting the zucchini in the food processor I like to add the whole sliced pieces in the casserole dish. I then spread the cheese, mayo and egg mixture on top like a goopy spread. Then I sprinkle the cheese on top!!!! This is the best way because I like the whole pieces of zucchini. :)


•option 2 scrape everything in the food processor making sure I get all the garlic too! 

• blend that yummy goodness all together until no chunks. 

• pour into casserole dish and sprinkle the rest of the cheese on top. 

• bake for 40 minutes 

I let it cool then cut into portions for meal prep. It's delish and even better heated up.

Now that damn song is stuck in my head!!! Haha! Since today is the one week count down until the fella and I leave for the beach I decided to put myself into tropical mode!! 

What better way to get your tropical mindset on than adding coconut to a smoothie? I feel the sand between my toes now! 

Ingredients 

•half a banana
•4 whole strawberries
•2 handfuls of spinach
• 6 pineapple chunks
• 8oz of water
• half a fresh squeezed orange
• large spoonful of plain Greek yogurt
• small handful of coconut flakes

The coconut doesn't break up too well so if you don't want chunks blend of chop the coconut up before you add it to the smoothie. 

I personally liked the little coconut flakes! 

Adding coconut water or milk would make this Amazeballs too!!! Even better I'd say!!! 

Go make this smoothie and slip into vacation mode!! Sip and enjoy!! 






Mommy of 2 getting healthy and fit!!





I was so excited when Meg asked me to guest post. Meg is my future sister in law. She is the one that actually pushed me to get healthy. We will all be heading on a cruise at the end of November for The Big Wedding and I knew as soon as we booked the trip that I had to start changing. I made it my goal to wear a two piece on the cruise. (I am not sure when I have worn a two piece last….my guess 10 years.)
How did I get to be so unhealthy? I have a 2 year old and a four year old. After having my first baby, my focus was solely on her. My whole life changed and I jumped into motherhood full force. Two years later, I delivered my sweet little man. Now I had two kids to focus on and I stopped thinking about myself at all. I made unhealthy food choices and did not work out. I was lost in my own body. I started wearing baggy clothes to cover up my tummy and became depressed. I hated myself! I would barely look into a mirror and cringed to have my picture taken. This is not how I envisioned motherhood. I dreamed of being super mom and still looking good.
When I became a mom, I started following blogs. I am so thankful that I follow Skinny Meg. Skinny Meg In May she had someone guest post named Annie. Annie's Blog Annie told her story about how she had transformed her life. I sat there and cried. I wanted this so bad too! I sent Annie an email and she got me started. She suggested signing up for a Challenge pack. I was so ready to start but was worried that I wouldn’t get results. Annie was great at encouraging me.
On June 10th, I started out with the Shakeology 3 day cleanse. I was not a shake person. I had tried a few in the past and could never get down the whole thing.Shakeology shakes are different. They taste good!! I also started Turbo Fire (it’s a kickboxing video). Below are my results.
Honestly I am so happy with my results. I finally wore my two piece this weekend. If you would have asked me at the beginning of June if that would have been possible, I would have said no. I had no idea my body could transform this fast.
What am I doing now? I was so thrilled with my results that I signed up to be a Beachbody coach. I want to help others feel how I feel now.
