I know y'all have been waiting for this because I've not stop talking about it. Well it's low carb, 160 calories per serving and delish!!! I think it's better heated up. I used it as meal prep and it made 6 servings. I did however eat it for lunch and dinner some days... Haha it's that good!
I will make a confession... I do NOT like onions... I'm weird. And I know cooking with them gives food sooooooooo much flavor!! WHATEVER!!! I can't stand them! Blah! Lol... Onion hater right here!
Feel free to keep them in the recipe though if you're a fan. I did however add extra garlic!!! Yuuuuum!
Not only will y'all get the direct link for food.com for the recipe y'all are going to get an OVERLOAD of pictures from me!!! You know the usual... :) But this time I tried taking step by step for the people like me that like to see visual recipes... Hopefully I'm not the only one that's like that... Lol!
When I went to the store for the ingredients (Food City) the local farms produce was in the store which was a bonus! $.99 per pound for zucchini!!! The yellow squash was the same price and that's what the online recipe calls for but they didn't look as good as the zucchini. And I really like it over yellow squash anyways.
Once home I started making the casserole first thing because it takes 40 minutes to bake. And I wanted it for lunch the next day and I wasn't going to eat it after 9:00 anyways.
This is very simple and yummy! Hope y'all enjoy!!!
• 1lb of zucchini- 3-4
• 4 garlic gloves- minced
• 1 egg
• 1/2 cup of mayo- I used light
• 1 cup of shredded cheese ( I useded Colby/ jack)
• salt to taste! I used kosher salt
• little bit of pepper
• half a chopped onion (I didn't use this)
• pre heat oven at 350 degrees
• chop zucchini in little slices and place in a large pot with about 4 cups of water or enough to slightly cover your your zucchini. Then put your garlic in the same pot with the zucchini. Let boil and steam the veggies! (This will also be the time when you put the chopped onion in with the zucchini and garlic to steam)
• in the food processor add the mayo, 1 eggs and 1/2 cup of cheese. And mix until creamy.
•Once you have steamed your zucchini pour out into a colander to drain the water.
• option 1- (which is my favorite) instead of putting the zucchini in the food processor I like to add the whole sliced pieces in the casserole dish. I then spread the cheese, mayo and egg mixture on top like a goopy spread. Then I sprinkle the cheese on top!!!! This is the best way because I like the whole pieces of zucchini. :)
•option 2 scrape everything in the food processor making sure I get all the garlic too!
• blend that yummy goodness all together until no chunks.
• pour into casserole dish and sprinkle the rest of the cheese on top.
• bake for 40 minutes
I let it cool then cut into portions for meal prep. It's delish and even better heated up.
